Ingredients
  

For the Marinade
  • 3 limes limes
  • 1 teaspoon ground coriander
  • ½ teaspoon ground cumin
  • Pinch cayenne
  • 4 tablespoon olive oil divided
For the Fajitas
  • 1 lb. large peeled and deveined shrimp tails discarded
  • 1 lb. boneless, skinless chicken breast cut into 1 ½-in. pieces
  • 1 lb. mixed-color peppers cut into 1-in. pieces
  • 3 jalapeños sliced ½ in. thick
  • 2 small red onions cut into 1-in.-thick wedges
  • Kosher salt and pepper
  • 12 small flour tortillas
For Serving
  • sour cream
  • sliced radishes
  • chopped cilantro

Method
 

  1. In a mixing bowl, combine the juice of limes, ground coriander, ground cumin, cayenne, and 2 tablespoons of olive oil. Mix well.
  2. Add shrimp and chicken to the marinade and let sit for 15 minutes.
  3. Preheat the grill to medium-high heat. Grill the chicken and shrimp for 5-7 minutes or until cooked through.
  4. In the last few minutes of grilling, add the peppers, jalapeños, and onions. Grill until they are tender.
  5. Warm the tortillas on the grill for about 1 minute per side.
  6. Serve the grilled chicken and shrimp with tortillas, sour cream, radishes, and cilantro.
