Ingredients
  

For the Waffle Batter
  • 1 ½ C all-purpose flour
  • ¼ C cornmeal
  • 1 teaspoon baking powder
  • 1 teaspoon onion powder
  • ½ teaspoon smoked paprika
  • ¼ teaspoon salt and ground black pepper
  • C fermented spreadable herbed cashew cheese cut or broken into small chunks (or 1 C vegan cheese shreds)
  • C chopped green onion
  • 1 C packed baby spinach
  • ¼ C melted vegan butter
  • 1 ½ C nondairy milk
For the Sriracha Maple Syrup
  • ½ C pure maple syrup
  • 1 to 2 tablespoon sriracha
For the Waffle Toppings
  • 1 avocado, sliced
  • 1 C arugula
  • dill sprigs, as garnish (optional)
  • chopped chives, as garnish (optional)

Equipment

  • Waffle Iron
  • Mixing Bowl

Method
 

  1. In a mixing bowl, combine all the dry ingredients for the waffle batter.
  2. Add the wet ingredients and mix until well combined.
  3. Preheat your waffle iron and pour the batter in to cook according to your waffle iron's instructions.
  4. In a small bowl, mix the maple syrup and sriracha together for the syrup.
  5. Serve the waffles topped with avocado, arugula, and drizzle with sriracha maple syrup.

Notes

You can adjust the sriracha amount to your preferred spice level. Feel free to add other toppings as desired.
