Ingredients
  

For the Shrimp
  • 1 pound shrimp, peeled and deveined
  • 1 tablespoon olive oil
  • 2 cloves garlic, minced
  • 1 teaspoon paprika
  • 1 teaspoon dried oregano
  • ½ teaspoon salt
  • ¼ teaspoon black pepper
For the Quinoa
  • 1 cup quinoa, uncooked
  • 2 cups water
For the Bowl
  • 4 cups romaine lettuce, chopped
  • 1 cucumber sliced
  • 1 cup tomatoes, diced
  • ½ red onion thinly sliced
  • ½ cup kalamata olives, sliced
  • ¾ cup feta cheese, crumbled
  • 1 lemon cut into wedges
  • 2 tablespoons fresh parsley, chopped

Method
 

  1. Heat olive oil in a skillet over medium heat. Add garlic and sauté for 1 minute.
  2. Add shrimp, paprika, oregano, salt, and pepper to the skillet. Cook until shrimp are pink and opaque, about 5-7 minutes.
  3. Meanwhile, rinse quinoa and combine it with water in a pot. Bring to a boil, then reduce heat and simmer for 15 minutes or until water is absorbed.
  4. Fluff quinoa with a fork and divide it among bowls. Top with shrimp, lettuce, cucumber, tomatoes, onion, olives, feta, and parsley.
  5. Serve with lemon wedges on the side.
