Garlic Parmesan Chicken with Roasted Broccoli Penne

  • 4 pieces boneless, skinless chicken breasts
For the Pasta
  • 12 oz penne pasta
For the Broccoli
  • 4 cups broccoli florets
For the Sauce
  • 1 cup heavy cream
  • ½ cup chicken broth
  • ¼ cup fresh parsley, chopped
  • 1 teaspoon lemon zest
  • 1 tablespoon lemon juice
For Seasoning
  • 1 cup grated Parmesan cheese, divided
  • 2 tablespoons olive oil, divided
  • 4 cloves garlic, minced, divided
  • 1 teaspoon Italian seasoning
  • ½ teaspoon paprika
  • ½ teaspoon salt, plus more to taste
  • ¼ teaspoon black pepper
  • 2 tablespoons butter

Method
 

  1. Preheat your oven to 400°F (200°C). Season chicken breasts with salt, pepper, paprika, and Italian seasoning.
  2. Heat olive oil in a skillet over medium heat. Add chicken and cook until browned on both sides, about 6-7 minutes per side. Remove from skillet and set aside.
  3. In the same skillet, add minced garlic and sauté for 1 minute. Stir in butter, heavy cream, chicken broth, lemon zest, and lemon juice. Bring to a simmer.
  4. Add Parmesan cheese and stir until melted. Return chicken to the skillet and coat with the sauce.
  5. Cook penne pasta according to package instructions. In the last 4 minutes of cooking, add broccoli florets. Drain and combine with chicken and sauce.
  6. Serve warm, garnished with parsley and additional Parmesan cheese. Add red pepper flakes if desired.
