- Heat olive oil in a skillet over medium heat. Add garlic and sauté until fragrant.
- Add mushrooms and ground coriander. Cook until mushrooms are tender. Season with salt and pepper.
- Pour in white wine and water. Stir to combine and let simmer for a few minutes.
- Add sherry vinegar and blanched green beans. Toss everything together and cook until heated through.
- Remove from heat and mix in chopped parsley before serving.
