Ingredients
  

Vegetables
  • 2 large bell peppers any color, sliced into strips
  • 8 ounces snow peas
  • 1 medium white onion cut into thick slices
  • 3 large carrots sliced into rounds
  • 1 cup broccoli cut into florets
  • 8 ounces mushrooms sliced
  • 1 cup purple cabbage sliced (optional)
Oils and Seasonings
  • 3 Tablespoons vegetable oil or avocado oil
  • 2 Tablespoons salted butter
  • 1 clove garlic finely minced
  • 1 Tablespoon ginger finely minced
  • 1 cup teriyaki sauce homemade or store-bought
Noodles
  • 1 package lo mein noodles 8 oz
  • pinch Salt to taste
  • pinch Pepper to taste
  • 1 green onion garnish (optional)

Equipment

  • Wok
  • Knife

Method
 

  1. Heat the vegetable oil and butter in a wok over medium-high heat.
  2. Add the garlic and ginger, sauté for 30 seconds until fragrant.
  3. Add the sliced vegetables and stir-fry for 5-7 minutes until tender-crisp.
  4. Pour in the teriyaki sauce and add cooked lo mein noodles. Toss to combine and heat through.
  5. Season with salt and pepper to taste. Serve hot, garnished with green onion if desired.

Notes

You can add or substitute other vegetables based on your preference. Serve with rice if desired.
