Easy Shepherd's Pie

Ingredients
  

For the Filling
  • 1 tablespoon Olive oil
  • 500 g Lamb mince, Lean
  • 1 Onion, Chopped
  • 2 Carrots, Finely chopped
  • 2 Celery stick, Finely chopped
  • 1 tablespoon Plain flour
  • 1 teaspoon Dried thyme Or fresh if you have it
  • 1 teaspoon Dried sage Or fresh if you have it
  • 500 ml Hot beef stock
  • 2 tablespoon Tomato puree
  • 2 tablespoon Worcestershire sauce Or Henderson's Relish
  • Salt and pepper To taste
For the Topping
  • 1 kg White potatoes
  • 2 tablespoon Butter
  • Salt and freshly ground black pepper

Method
 

  1. Heat olive oil in a skillet over medium heat. Add the lamb mince and cook until browned.
  2. Add chopped onion, carrots, and celery to the skillet. Cook until the vegetables are soft.
  3. Stir in the plain flour, thyme, and sage. Cook for 1 minute.
  4. Add the hot beef stock, tomato puree, and Worcestershire sauce. Season with salt and pepper. Simmer for 20 minutes.
  5. Meanwhile, peel and chop the potatoes. Boil in salted water until tender, then drain.
  6. Mash the potatoes with butter, adding salt and pepper to taste.
  7. Preheat the oven to 200°C (400°F).
  8. Spread the lamb filling in a baking dish and top with the mashed potatoes. Bake for 25 minutes until golden.

Notes

You can add peas or corn to the filling for extra flavor and texture.
