- Heat olive oil in a skillet over medium heat. Add the lamb mince and cook until browned.
- Add chopped onion, carrots, and celery to the skillet. Cook until the vegetables are soft.
- Stir in the plain flour, thyme, and sage. Cook for 1 minute.
- Add the hot beef stock, tomato puree, and Worcestershire sauce. Season with salt and pepper. Simmer for 20 minutes.
- Meanwhile, peel and chop the potatoes. Boil in salted water until tender, then drain.
- Mash the potatoes with butter, adding salt and pepper to taste.
- Preheat the oven to 200°C (400°F).
- Spread the lamb filling in a baking dish and top with the mashed potatoes. Bake for 25 minutes until golden.
Notes
You can add peas or corn to the filling for extra flavor and texture.
