Ingredients
  

For the shortcrust pastry
  • 180 g plain flour all-purpose flour
  • 40 g ground almonds
  • 125 g butter
  • 30 g caster sugar superfine sugar
  • 1 pinch salt
  • 1 large egg
For the filling
  • 300 g rhubarb finely sliced
  • 125 g caster sugar superfine sugar
  • 1 tablespoon cornflour cornstarch
To finish
  • 1 tablespoon caster sugar
  • 1 tablespoon milk

Method
 

  1. Preheat your oven to 180°C (350°F).
  2. In a mixing bowl, combine plain flour, ground almonds, butter, caster sugar, salt, and egg. Mix until a dough forms.
  3. Press the dough into a tart pan and chill for 15 minutes.
  4. In another bowl, mix rhubarb, caster sugar, and cornflour. Pour the mixture into the chilled tart shell.
  5. Bake for 30 minutes until golden brown. Remove from the oven and let cool.
  6. Brush the top with milk and sprinkle with caster sugar before serving.

Notes

You can serve the tart warm or chilled. It pairs well with whipped cream or ice cream.
