Ingredients
  

For the Chicken and Vegetables
  • 2 medium zucchini, sliced into half moons
  • 1 lb boneless, skinless chicken breast, cut into bite-sized pieces
  • 1 cup cherry tomatoes, halved
  • 1 red onion, thinly sliced
  • 3 cloves garlic, minced
For the Seasoning
  • 2 tablespoons olive oil
  • 1 teaspoon dried oregano
  • ½ teaspoon dried thyme
  • ½ teaspoon paprika
  • Salt and black pepper to taste
  • cup crumbled feta cheese
  • Fresh parsley or basil, chopped (for garnish)

Method
 

  1. Preheat your oven to 375°F (190°C).
  2. In a baking dish, combine zucchini, chicken, cherry tomatoes, red onion, and garlic.
  3. Drizzle olive oil over the mixture and season with oregano, thyme, paprika, salt, and pepper. Toss to coat evenly.
  4. Bake for 30 minutes or until the chicken is cooked through.
  5. Sprinkle feta cheese on top and return to the oven for an additional 5 minutes.
  6. Garnish with fresh parsley or basil before serving.
