Ingredients
  

For the Fish
  • 2 fillets Fish (such as cod, halibut, or sea bass)
Herbs and Seasonings
  • 6 sprigs Thyme, finely chopped
  • 3 sprigs Rosemary, finely chopped
  • 1 teaspoon Dried Oregano
  • 2 teaspoon Chopped or dried Parsley
  • 4 cloves Garlic, minced or chopped (or 2 teaspoon garlic paste)
  • 1 teaspoon Chopped Basil (optional, but highly recommended)
  • 1 teaspoon Lemon zest (from about 1 small lemon)
  • 1 tablespoon Fresh Lemon juice
  • 1 tablespoon Sweet chili sauce
  • ½ teaspoon Salt
  • ½ teaspoon Black pepper
  • ¼ cup Olive oil
For the Garnish
  • 1 cup Cherry tomatoes, halved
  • ½ cup Pitted Olives (Kalamata or Castelvetrano work wonderfully)

Method
 

  1. Preheat your oven to 400°F (200°C).
  2. In a baking dish, combine the olive oil, garlic, herbs, lemon zest, lemon juice, sweet chili sauce, salt, and pepper. Mix well.
  3. Place the fish fillets in the dish and coat them with the mixture.
  4. Add the halved cherry tomatoes and olives around the fish.
  5. Bake for 25 minutes or until the fish is cooked through and flakes easily with a fork.

Notes

Serve with a side of rice or bread to soak up the delicious juices.
