Method
- Preheat your oven to 400°F (200°C).
- In a baking dish, combine the olive oil, garlic, herbs, lemon zest, lemon juice, sweet chili sauce, salt, and pepper. Mix well.
- Place the fish fillets in the dish and coat them with the mixture.
- Add the halved cherry tomatoes and olives around the fish.
- Bake for 25 minutes or until the fish is cooked through and flakes easily with a fork.

Serve with a side of rice or bread to soak up the delicious juices.
