Method
- Chop the onion, bell peppers, and garlic.
- In a large pot, heat olive oil over medium heat. Add the chopped vegetables and sauté until softened.
- Add the ground beef and cook until browned. Drain excess fat if needed.
- Stir in the salt, tomato paste, chili powder, cumin, cocoa powder, oregano, and black pepper. Cook for a minute.
- Add the diced tomatoes, broth or water, and apple cider vinegar. Bring to a simmer.
- Reduce heat and let simmer for 20 minutes, stirring occasionally.
- Serve hot, topped with diced avocado, scallions, and cilantro if desired.
Notes
Adjust seasoning to taste. You can add beans for extra texture.
