Ingredients
  

Base Ingredients
  • 1 large yellow onion
  • 1 medium red bell pepper
  • 1 medium green bell pepper
  • 3 cloves garlic
  • 1 tablespoon olive oil
  • 1 pound lean ground beef
Spices
  • 2 teaspoons kosher salt divided
  • 2 tablespoons tomato paste
  • 2 tablespoons chili powder
  • 1 tablespoon ground cumin
  • 1 tablespoon unsweetened natural cocoa powder
  • 2 teaspoons dried oregano
  • ¼ teaspoon freshly ground black pepper
Liquid Ingredients
  • 1 can fire-roasted diced tomatoes 15-ounce
  • 1 ½ cups low-sodium beef broth or water
  • 1 tablespoon apple cider vinegar
For Serving (Optional)
  • 1 medium avocado diced
  • 2 medium scallions thinly sliced
  • ½ cup coarsely chopped fresh cilantro

Method
 

  1. Chop the onion, bell peppers, and garlic.
  2. In a large pot, heat olive oil over medium heat. Add the chopped vegetables and sauté until softened.
  3. Add the ground beef and cook until browned. Drain excess fat if needed.
  4. Stir in the salt, tomato paste, chili powder, cumin, cocoa powder, oregano, and black pepper. Cook for a minute.
  5. Add the diced tomatoes, broth or water, and apple cider vinegar. Bring to a simmer.
  6. Reduce heat and let simmer for 20 minutes, stirring occasionally.
  7. Serve hot, topped with diced avocado, scallions, and cilantro if desired.

Notes

Adjust seasoning to taste. You can add beans for extra texture.
