Ingredients
  

For the Salad
  • 1 can (15 oz) chickpeas, drained and rinsed
  • ½ cup shredded carrots
  • ½ cup red bell pepper, diced
  • ¼ cup red cabbage, thinly sliced
  • 2 tablespoon chopped green onions
For the Dressing
  • 2 tablespoon tahini
  • 1 tablespoon soy sauce
  • 1 tablespoon lime juice
  • 1 teaspoon honey
  • ½ teaspoon red pepper flakes
  • ½ teaspoon sesame oil
  • 1 clove garlic, minced
For Garnish
  • 1 tablespoon chopped peanuts for garnish
  • 1 tablespoon fresh cilantro, chopped for garnish
  • ½ teaspoon sesame seeds for garnish

Method
 

  1. In a large bowl, combine the chickpeas, shredded carrots, red bell pepper, red cabbage, and green onions.
  2. In a small bowl, whisk together tahini, soy sauce, lime juice, honey, red pepper flakes, sesame oil, and minced garlic. Pour the dressing over the salad and toss to combine.
  3. Garnish with chopped peanuts, cilantro, and sesame seeds before serving.

Notes

Adjust the spice level by adding more or fewer red pepper flakes.
