Ingredients
  

For the Fries
  • 3 large (600g) white starchy potatoes e.g russet
  • 2 tablespoon cornflour (cornstarch)
For the Masala Seasoning
  • ½ teaspoon salt plus extra for sprinkling
  • ½ teaspoon red chili powder
  • 1 teaspoon chaat masala
  • ¼ teaspoon dried mango powder (amchoor) optional
  • Neutral Oil for deep frying
  • fresh coriander for garnish

Method
 

  1. Peel the potatoes and cut them into fries.
  2. Soak the fries in water for 15 minutes to remove excess starch.
  3. Drain and pat the fries dry, then toss them in cornflour.
  4. Heat oil in a deep fryer and fry the potatoes until golden brown and crispy.
  5. Mix the salt, red chili powder, chaat masala, and dried mango powder in a bowl.
  6. Toss the hot fries in the masala seasoning and garnish with fresh coriander.

Notes

Adjust the spices in the masala according to your taste.
