- In a saucepan, combine gochujang, cottage cheese, and chicken broth. Heat over medium until smooth.
- In a skillet, cook ground beef until crispy. Add maple syrup, coconut aminos, rice vinegar, sesame oil, and miso. Stir well.
- Serve beef over rice with broth and garnish with green onions, cucumbers, and sesame seeds.
Notes
You can adjust the spice level by varying the amount of gochujang used.
