Ingredients
  

For the Broth
  • ΒΌ cup Gochujang
  • 1 cup Low Fat Cottage Cheese
  • 3 cups Chicken Broth
For the Crispy Beef
  • 1 pound Ground Beef 96/4
  • 2 Tablespoons Maple Syrup
  • 2 Tablespoons Coconut Aminos or low sodium soy sauce
  • 2 Tablespoons Rice Vinegar
  • 1 Tablespoon Toasted Sesame Oil
  • 1 Tablespoon White Miso Paste optional
  • 4 Green Onions thinly sliced, white and green parts separated
For Serving
  • 2 bags (10 oz each) Frozen Jasmine Rice or 4 cups steamed rice
  • Cucumbers Sliced
  • Green Onion Toasted Sesame Seeds or Chili Onion Crunch

Method
 

  1. In a saucepan, combine gochujang, cottage cheese, and chicken broth. Heat over medium until smooth.
  2. In a skillet, cook ground beef until crispy. Add maple syrup, coconut aminos, rice vinegar, sesame oil, and miso. Stir well.
  3. Serve beef over rice with broth and garnish with green onions, cucumbers, and sesame seeds.

Notes

You can adjust the spice level by varying the amount of gochujang used.
