Method
- Preheat your grill or grill pan over medium heat.
- Season the chicken breasts with salt and pepper, then coat them with pesto.
- Grill the chicken for about 6-7 minutes on each side until fully cooked.
- During the last few minutes of grilling, add mozzarella slices on top of the chicken to melt.
- Remove the chicken from the grill and let it rest for a few minutes.
- Slice the ciabatta rolls in half and drizzle with olive oil.
- Assemble the sandwich by placing the grilled chicken on the roll, adding tomato slices, arugula, and a splash of lemon juice if desired.
- Close the sandwich and enjoy!

You can add other toppings like avocado or different greens for variety.
