Ingredients
  

Chicken
  • 2 pieces boneless, skinless chicken breasts about 6 oz / 170 g each, flattened slightly
Pesto and Cheese
  • ΒΌ cup fresh basil pesto homemade or store-bought
  • 4 oz fresh mozzarella sliced
Bread and Extras
  • 2 large ciabatta or sourdough rolls
  • 2 tablespoons olive oil divided
  • to taste Salt and pepper
  • 1 medium tomato sliced (optional)
  • a handful arugula or baby spinach
  • a splash lemon juice (optional)

  • Grill or Grill Pan
  • Knife

Method
 

  1. Preheat your grill or grill pan over medium heat.
  2. Season the chicken breasts with salt and pepper, then coat them with pesto.
  3. Grill the chicken for about 6-7 minutes on each side until fully cooked.
  4. During the last few minutes of grilling, add mozzarella slices on top of the chicken to melt.
  5. Remove the chicken from the grill and let it rest for a few minutes.
  6. Slice the ciabatta rolls in half and drizzle with olive oil.
  7. Assemble the sandwich by placing the grilled chicken on the roll, adding tomato slices, arugula, and a splash of lemon juice if desired.
  8. Close the sandwich and enjoy!

Notes

You can add other toppings like avocado or different greens for variety.
