- Preheat your oven to 425°F (220°C).
- Soak the cut potatoes in cold water for 30 minutes to remove excess starch, then drain and pat dry.
- In a large bowl, toss the potatoes with olive oil, smoked paprika, garlic powder, sea salt, and black pepper.
- Spread the potatoes in a single layer on a baking sheet.

- Remove from the oven and immediately toss with finely grated parmesan and chopped parsley.
