Ingredients
  

For the Pasta
  • 12 oz Farfalle pasta
For the Sauce
  • 1 cup Cherry tomatoes
  • 2 cups Fresh spinach
  • 2 cloves Garlic minced
  • 1 cup Heavy cream
  • ½ cup Parmesan cheese grated
  • 2 tablespoon Olive oil
  • 2 tablespoon Butter
  • 1 teaspoon Salt
  • ½ teaspoon Black pepper
  • 1 teaspoon Italian seasoning
  • ¼ cup Fresh basil optional
  • ½ cup Pasta water for sauce

Method
 

  1. Cook the farfalle pasta according to package instructions. Drain and set aside.
  2. In a pan, heat olive oil and butter over medium heat. Add minced garlic and sauté until fragrant.
  3. Add cherry tomatoes and cook until they start to soften. Then, add fresh spinach and cook until wilted.
  4. Pour in heavy cream and add grated Parmesan cheese. Stir until the cheese melts and sauce thickens.
  5. Add salt, black pepper, and Italian seasoning. Mix well.
  6. Combine the cooked farfalle pasta with the sauce. If the sauce is too thick, add reserved pasta water to reach desired consistency.
  7. Garnish with fresh basil if desired and serve hot.

Notes

This dish can be served with additional Parmesan cheese on top. You can also add grilled chicken or shrimp for extra protein.
