  • 8 ounces penne pasta uncooked
For the Sauce
  • 1 pound ground turkey
  • 4 cups baby spinach packed
  • 1 small yellow onion diced
  • 3 cloves garlic minced
  • 1.5 cups low-sodium chicken broth
  • 1 cup half-and-half
  • ½ cup grated Parmesan cheese
  • 1 tablespoon olive oil
  • ¾ teaspoon kosher salt
  • ¼ teaspoon ground black pepper
  • ½ teaspoon crushed red pepper flakes

Method
 

  1. Cook the penne pasta according to package instructions. Drain and set aside.
  2. In a skillet, heat olive oil over medium heat. Add diced onion and garlic, sauté until soft.
  3. Add ground turkey to the skillet. Cook until browned and cooked through.
  4. Stir in chicken broth, half-and-half, salt, black pepper, and red pepper flakes. Bring to a simmer.
  5. Add spinach and cooked pasta, mixing until spinach wilts and everything is heated through.
  6. Sprinkle Parmesan cheese on top and serve warm.

Notes

You can adjust the amount of red pepper flakes for your desired spice level.
