Ingredients
  

For the Salad
  • 2 cups grilled corn kernels about 3 ears of corn
  • 1 large English cucumber, diced
  • ½ cup red onion, finely chopped
  • ¼ cup chopped fresh cilantro
  • ¼ cup mayonnaise
  • ¼ cup sour cream
  • 1 tablespoon lime juice
  • ½ teaspoon chili powder
  • ½ teaspoon smoked paprika
  • to taste Salt and black pepper
Optional Topping
  • cup crumbled feta or cotija cheese optional

Method
 

  1. In a large bowl, combine the grilled corn, diced cucumber, red onion, and cilantro.
  2. In a separate bowl, mix the mayonnaise, sour cream, lime juice, chili powder, smoked paprika, salt, and black pepper.
  3. Pour the dressing over the corn mixture and toss to combine. If using, sprinkle the feta or cotija cheese on top.

Notes

Serve chilled or at room temperature. Adjust seasoning to your taste.
