For the Salad
  • 2 cans chickpeas 15.5-ounce cans, drained and rinsed
  • 2 large English cucumbers diced
  • cup finely diced red onion or more to taste
  • 2 tablespoons finely chopped fresh dill
  • 2 tablespoons finely chopped fresh parsley
  • ¼ cup crumbled feta cheese optional
