For the Pasta
  • 12 oz rigatoni or pasta of choice
For the Sauce
  • 2 tablespoons olive oil
  • 2 chicken breasts cubed
  • 2 cups broccoli florets
  • 4 cloves garlic, minced
  • 1 ½ cups heavy cream
  • ½ cup grated Parmesan cheese
  • ½ cup chicken broth
  • 1 teaspoon Italian seasoning
  • to taste Salt and pepper
  • for garnish Fresh parsley, chopped (optional)

Method
 

  1. Cook the rigatoni according to package instructions until al dente.
  2. In a skillet, heat olive oil over medium heat, add chicken, and cook until golden and cooked through.
  3. Add broccoli and garlic to the skillet. Sauté until broccoli is tender.
  4. Stir in heavy cream, Parmesan cheese, chicken broth, and Italian seasoning. Simmer until thickened.
  5. Toss the pasta in the sauce. Season with salt and pepper to taste. Garnish with parsley if desired.
