Ingredients
  

Dairy
  • ¾ cup milk
  • 2 ¼ cups heavy cream
Eggs
  • 6 large egg yolks
Sugar and Cocoa
  • ¾ cup granulated sugar
  • 3 teaspoons unsweetened cocoa powder
  • 3 teaspoons Dutch-processed cocoa powder
  • ¼ teaspoon kosher salt
  • 3 ounces semi-sweet chocolate melted and cooled slightly
Flavorings
  • 1 tablespoon vanilla extract
  • 2 teaspoons chocolate extract
  • 2 teaspoons almond extract
Cherries
  • 2 cups pitted cherries roughly chopped
  • 2 ounces semisweet chocolate chopped

Method
 

  1. In a saucepan, heat the milk over medium heat until steaming.
  2. In a bowl, whisk the egg yolks, sugar, cocoa powders, and salt together.
  3. Slowly pour the hot milk into the egg mixture while whisking constantly.
  4. Return the mixture to the saucepan and cook over low heat until thickened.
  5. Remove from heat and stir in the melted chocolate, heavy cream, and extracts.
  6. Chill the mixture in the refrigerator for at least 2 hours.
  7. Pour the mixture into an ice cream maker and churn according to the manufacturer's instructions.
  8. During the last few minutes of churning, add the chopped cherries and chocolate.
  9. Transfer to a container and freeze until firm.

Notes

For a richer flavor, use high-quality chocolate. You can also substitute different fruits for cherries.
