Method
- In a saucepan, heat the milk over medium heat until steaming.
- In a bowl, whisk the egg yolks, sugar, cocoa powders, and salt together.
- Slowly pour the hot milk into the egg mixture while whisking constantly.
- Return the mixture to the saucepan and cook over low heat until thickened.
- Remove from heat and stir in the melted chocolate, heavy cream, and extracts.
- Chill the mixture in the refrigerator for at least 2 hours.
- Pour the mixture into an ice cream maker and churn according to the manufacturer's instructions.
- During the last few minutes of churning, add the chopped cherries and chocolate.
- Transfer to a container and freeze until firm.
Notes
For a richer flavor, use high-quality chocolate. You can also substitute different fruits for cherries.
