- Prepare the chimichurri sauce by mixing parsley, minced garlic, oregano, cumin, red pepper flakes, olive oil, lemon juice, and apple cider vinegar in a bowl.
- For the creamy garlic sauce, combine Greek yogurt (or mayonnaise), minced garlic, lemon juice, salt, and pepper in a separate bowl.
- Grill the marinated chicken until cooked through, about 15 minutes, turning halfway.
- Assemble the bowls by layering quinoa, black beans, corn, cherry tomatoes, avocado, and spinach. Top with grilled chicken and chimichurri sauce.
- Drizzle with creamy garlic sauce before serving.
