Ingredients
  

For the Salad
  • 400 g Chickpeas, drained and rinsed
  • 250 g Fresh Mozzarella Balls, small or bite-sized
  • 250 g Cherry Tomatoes, halved
  • ΒΌ cup Fresh Basil, roughly chopped
For the Dressing
  • 3 tablespoons Extra Virgin Olive Oil
  • 2 tablespoons Balsamic Vinegar
  • Salt to taste
  • Black Pepper to taste

Method
 

  1. In a large bowl, combine the chickpeas, mozzarella balls, cherry tomatoes, and basil.
  2. In a separate bowl, whisk together the olive oil, balsamic vinegar, salt, and pepper. Pour over the salad and toss gently to combine.

Serve immediately for the best flavor. You can also refrigerate it for later.
