Method
- Season the chicken breasts with salt and pepper. Heat olive oil in a grill pan over medium heat and cook the chicken until no longer pink, about 6-7 minutes per side.
- Spread mayonnaise and Dijon mustard on the bread slices. Layer with cooked chicken, avocado, cheese, red onion, and tomato. Top with another slice of bread.
- Butter or brush the outside of the sandwiches with olive oil. Grill in the pan over medium heat until the bread is golden and the cheese is melted, about 3-4 minutes per side.
Notes
You can customize the ingredients based on your preferences. Try adding spinach or arugula for extra greens.
