Ingredients
  

For the Chicken
  • 2 pieces boneless skinless chicken breasts You can also use grilled chicken for added flavor.
Seasoning
  • to taste Salt and pepper
For the Sandwich
  • 1 tablespoon olive oil For cooking the chicken.
  • 1 avocado Sliced.
  • 4 slices slices of cheese Swiss, cheddar, or provolone work well.
  • 4 slices bread Sourdough, ciabatta, or your choice.
  • 2 tablespoons mayonnaise
  • 1 tablespoon Dijon mustard
  • 1 small red onion Thinly sliced.
  • 1 piece tomato Sliced.
For Grilling
  • to taste Butter or olive oil For grilling the sandwiches.

Method
 

  1. Season the chicken breasts with salt and pepper. Heat olive oil in a grill pan over medium heat and cook the chicken until no longer pink, about 6-7 minutes per side.
  2. Spread mayonnaise and Dijon mustard on the bread slices. Layer with cooked chicken, avocado, cheese, red onion, and tomato. Top with another slice of bread.
  3. Butter or brush the outside of the sandwiches with olive oil. Grill in the pan over medium heat until the bread is golden and the cheese is melted, about 3-4 minutes per side.

Notes

You can customize the ingredients based on your preferences. Try adding spinach or arugula for extra greens.
