Ingredients
  

For the Dough
  • 1 and ½ cups all-purpose flour spooned & leveled
  • 1 teaspoon ground cinnamon optional
  • 1 teaspoon baking soda
  • ¾ teaspoon salt
  • 1 cup unsalted butter softened to room temperature
  • 1 cup packed light or dark brown sugar
  • ½ cup granulated sugar
  • 2 large eggs at room temperature
  • 1 Tablespoon unsulphured or dark molasses do not use blackstrap; I prefer Grandma’s brand
  • 2 teaspoons pure vanilla extract
For the Oats and Chocolate Chips
  • 3 cups old-fashioned whole rolled oats
  • 1 and ¾ cups semi-sweet chocolate chips
  • flaky sea salt for sprinkling (optional)

Method
 

  1. Preheat your oven to 350°F (175°C) and line a baking sheet with parchment paper.
  2. In a mixing bowl, combine the flour, cinnamon, baking soda, and salt. Set aside.
  3. In another bowl, beat together the butter, brown sugar, and granulated sugar until creamy. Add the eggs, molasses, and vanilla extract, mixing until well combined.
  4. Gradually add the dry ingredients to the wet ingredients, mixing until just combined. Stir in the oats and chocolate chips.
  5. Drop spoonfuls of dough onto the prepared baking sheet. Sprinkle with flaky sea salt if desired.
  6. Bake for 10-12 minutes, or until the edges are golden. Let cool on the baking sheet for a few minutes before transferring to a wire rack to cool completely.

Notes

Store cookies in an airtight container for up to a week. You can substitute different types of chocolate chips if you prefer.
