Ingredients
  

For the Muffins
  • 3 cups chilled mashed potatoes
  • 1 large egg
  • 1 cup shredded cheddar cheese
  • ¼ cup chopped chives
  • ¼ cup all-purpose flour
  • ½ teaspoon garlic powder
For Rolling
  • ½ cup grated Parmesan cheese for rolling
For Greasing
  • cooking spray or butter for greasing the muffin tin

Method
 

  1. Preheat your oven to 375°F (190°C) and grease the muffin tin with cooking spray or butter.
  2. In a mixing bowl, combine chilled mashed potatoes, egg, cheddar cheese, chives, flour, garlic powder, salt, and pepper. Mix until well combined.
  3. Roll the mixture into balls and then roll each ball in grated Parmesan cheese.
  4. Place the balls into the greased muffin tin and bake for 25 minutes or until golden brown.
  5. Let the muffins cool slightly before removing them from the tin.

Notes

You can add other herbs or spices to suit your taste. Serve warm for the best flavor.
