Ingredients
  

For the Beef Filling
  • 1 pound lean ground beef
  • 1 tablespoon vegetable oil
  • 1 small yellow onion, finely chopped
  • 2 cloves garlic, minced
  • 1 tablespoon chili powder
  • 1 teaspoon ground cumin
  • ½ teaspoon smoked paprika
  • ½ teaspoon salt or to taste
  • ¼ teaspoon black pepper
For the Assembly
  • 2 cups red enchilada sauce
  • 10 pieces corn tortillas (6-inch), cut into quarters
  • 2 cups shredded Mexican blend cheese
  • 1 cup canned black beans, drained and rinsed
  • 1 cup frozen corn, thawed
  • 2 tablespoons chopped fresh cilantro
For Serving
  • 1 medium tomato, diced
  • ½ cup sour cream
  • 1 sliced avocado or guacamole

Method
 

  1. Heat the oil in a skillet over medium heat. Add the onion and garlic, cooking until softened.
  2. Add the ground beef, chili powder, cumin, paprika, salt, and pepper. Cook until the beef is browned and cooked through.
  3. Preheat the oven to 350°F (175°C). Layer the tortillas, beef mixture, enchilada sauce, and cheese in a baking dish.
  4. Repeat layers until all ingredients are used, finishing with cheese on top. Bake for 20 minutes until the cheese is melted.
  5. Garnish with black beans, corn, and cilantro. Serve with diced tomato, sour cream, and avocado.

Notes

You can customize the toppings based on your preferences. Try adding jalapeños or olives for extra flavor.
