Ingredients

  • 1 pound ground beef 80/20 recommended
  • 1 ½ cups elbow macaroni about 170g
  • 1 medium yellow onion diced, about 150g
  • 3 cloves garlic minced, about 1 tablespoon
  • 14.5 oz canned diced tomatoes fire-roasted preferred
  • 4 cups low-sodium beef broth
  • 2 cups shredded sharp cheddar cheese about 200g
  • 1 cup whole milk
  • 1 tablespoon Worcestershire sauce
  • 1 teaspoon Dijon mustard
  • to taste Salt
  • to taste freshly cracked black pepper
For Cooking
  • 2 tablespoons butter

Method
 

  1. In a large pot, melt the butter over medium heat. Add the diced onion and garlic, cooking until softened.
  2. Add the ground beef to the pot, cooking until browned. Drain excess fat.
  3. Stir in the diced tomatoes, beef broth, Worcestershire sauce, and Dijon mustard. Bring to a simmer.
  4. Add the elbow macaroni and cook according to package instructions until al dente.
  5. Stir in the milk and cheddar cheese until melted and creamy. Season with salt and pepper to taste.
