Method
- Heat the skillet over medium heat and spray with cooking spray. Add olive oil.
- Add broccoli, red bell pepper, scallions, and ¼ teaspoon salt. Sauté for 3-4 minutes until vegetables are tender.
- In a bowl, whisk together eggs, milk, remaining salt, and ground pepper. Pour the mixture over the sautéed vegetables.
- Cook for 2-3 minutes until the eggs are set. Sprinkle Parmesan cheese on top and fold the omelet. Cook for another minute.
- Serve warm.
Notes
You can add any vegetables of your choice or substitute the cheese with your favorite type.
