  • 2 cups cooked rice white, brown, or microwaveable

  • 2 breasts cooked chicken sliced or shredded; rotisserie or leftover grilled thighs work well
For the Salad
  • 2 cups romaine lettuce chopped; cos or baby spinach can be used
  • ½ cup cherry tomatoes halved; optional
  • ½ cup croutons can toast torn sourdough in olive oil and garlic powder
  • ¼ cup parmesan cheese shaved or grated; real parmigiano is recommended
  • cup Caesar dressing store-bought is fine
For Serving
  • to taste fresh cracked black pepper

Method
