Ingredients
  

For the Quesadilla
  • 1.25 ounces cooked chicken breakfast sausage, chopped if frozen, thawed
  • 1 large egg
  • 2 tablespoons egg whites *optional
  • 3 tablespoons part-skim cottage cheese
  • 2 tablespoons chopped scallions
  • 1 pinch kosher salt
  • to taste black pepper
  • 1 ounce part-skim shredded cheddar
For Serving
  • 1 7-inch low carb tortilla preferably Mission whole wheat carb balance or gluten-free
  • salsa and guacamole optional for serving

Method
 

  1. In a skillet, cook the chopped chicken sausage until heated through.
  2. In a bowl, whisk together the egg, egg whites, cottage cheese, scallions, salt, and pepper.
  3. Pour the egg mixture into the skillet and cook until the eggs are set.
  4. Place the egg mixture on one half of the tortilla, sprinkle with cheddar, and fold the tortilla over.
  5. Cook on both sides until the tortilla is golden and the cheese is melted.
  6. Slice and serve with salsa and guacamole if desired.

Notes

This quesadilla can be customized with your favorite vegetables or sauces.
