For the Filling
  • 4 links Sausage Aidell's Chicken Apple Breakfast
  • 6 pieces Sweet Peppers (2 red, 2 yellow, 2 orange), chopped
  • 1 tablespoon Cilantro, chopped
  • 1 cup Velveeta Cheese
  • ¼ cup Taco Sauce Green Chile
  • 2 tablespoons Milk
  • ½ teaspoon Kosher Salt more to taste
  • ¼ teaspoon Pepper
  • 10 pieces Eggs
For the Wrap
  • 8 pieces Flour Tortillas, Fresh
  • to taste Taco Sauce, Green
  • to taste Tomatoes, Fresh

Method
 

  1. In a skillet, cook the chicken sausage until browned. Remove and slice.
  2. In the same skillet, add chopped sweet peppers and sauté until soft. Beat eggs with milk, salt, and pepper, then pour into the skillet and scramble until cooked.
  3. Add sliced sausage, cilantro, cheese, and green taco sauce to the eggs, stirring until combined and cheese melts.
  4. Warm tortillas, then fill each with the egg mixture. Top with fresh tomatoes and additional taco sauce, then roll up to seal.
