- In a mixing bowl, combine warm milk, granulated sugar, and active dry yeast. Let it sit until frothy, about 5-10 minutes.
- Add Greek yogurt, melted salted butter, eggs, and vanilla to the yeast mixture. Mix until combined.
- Gradually add bread flour and salt, mixing until a dough forms. Fold in freeze-dried blueberries if using.
- Knead the dough on a floured surface until smooth. Let it rise in a warm place until doubled in size, about 1 hour.
- After rising, shape the dough into fritters and fold in fresh or frozen blueberries.
- Heat avocado oil in a frying pan. Fry fritters until golden brown on both sides, about 3-4 minutes per side.
- For the glaze, mix powdered sugar, lemon juice, and lemon zest until smooth. Drizzle over warm fritters.
