Ingredients
  

For the Fritters
  • 1 cup Milk Warmed to around 110F
  • 2 tablespoon Granulated Sugar
  • 2 teaspoon Active Dry Yeast
  • ½ cup Greek Yogurt or Sour Cream
  • ¼ cup Salted Butter Melted
  • ½ cup Freeze-Dried Wild Blueberries Optional
  • 2 large Eggs
  • 1 tablespoon Vanilla Bean Paste or Extract
  • 3 cups Bread Flour All-purpose flour works as a substitute
  • 1 teaspoon Salt
  • 1 cup Avocado Oil For frying
For the Glaze
  • 1 cup Powdered Sugar
  • 2 tablespoon Lemon Juice
  • 1 tablespoon Lemon Zest
  • 1 cup Fresh or Frozen Blueberries Fresh recommended
  • ½ cup All-Purpose Flour For shaping

Method
 

  1. In a mixing bowl, combine warm milk, granulated sugar, and active dry yeast. Let it sit until frothy, about 5-10 minutes.
  2. Add Greek yogurt, melted salted butter, eggs, and vanilla to the yeast mixture. Mix until combined.
  3. Gradually add bread flour and salt, mixing until a dough forms. Fold in freeze-dried blueberries if using.
  4. Knead the dough on a floured surface until smooth. Let it rise in a warm place until doubled in size, about 1 hour.
  5. After rising, shape the dough into fritters and fold in fresh or frozen blueberries.
  6. Heat avocado oil in a frying pan. Fry fritters until golden brown on both sides, about 3-4 minutes per side.
  7. For the glaze, mix powdered sugar, lemon juice, and lemon zest until smooth. Drizzle over warm fritters.

Notes

Serve the fritters warm for the best flavor. You can use different types of yogurt for varied richness.
