Ingredients
  

For the Cream Cheese Filling
  • 8 oz cream cheese softened
  • ¼ cup powdered sugar
  • ½ teaspoon vanilla extract
For the Blueberry Layer
  • 1 cup fresh or frozen blueberries
  • 2 tablespoon sugar
  • 1 teaspoon lemon juice
  • 1 teaspoon cornstarch optional for thickening
  • 1 tablespoon water optional for thickening
For the French Toast
  • 8 slices brioche or thick white bread
  • 3 large eggs
  • ½ cup milk
  • 1 teaspoon cinnamon
  • ½ teaspoon vanilla extract
  • Butter for frying
For Topping
  • Fresh blueberries
  • Powdered sugar
  • Maple syrup optional

Method
 

  1. In a mixing bowl, combine cream cheese, powdered sugar, and vanilla extract until smooth.
  2. In a separate bowl, mix blueberries, sugar, lemon juice, and optional cornstarch mixed with water.
  3. In another bowl, whisk together eggs, milk, cinnamon, and vanilla extract.
  4. Spread cream cheese filling on half of the bread slices, top with blueberry mixture, and cover with remaining bread slices.
  5. Heat butter in a skillet over medium heat. Dip each sandwich in egg mixture and cook until golden brown on both sides.
  6. Serve warm, topped with fresh blueberries, powdered sugar, and maple syrup if desired.

Notes

For a thicker blueberry layer, use the cornstarch and water mixture. Enjoy your breakfast!
