- In a mixing bowl, combine cream cheese, powdered sugar, and vanilla extract until smooth.
- In a separate bowl, mix blueberries, sugar, lemon juice, and optional cornstarch mixed with water.
- In another bowl, whisk together eggs, milk, cinnamon, and vanilla extract.
- Spread cream cheese filling on half of the bread slices, top with blueberry mixture, and cover with remaining bread slices.
- Heat butter in a skillet over medium heat. Dip each sandwich in egg mixture and cook until golden brown on both sides.
- Serve warm, topped with fresh blueberries, powdered sugar, and maple syrup if desired.
Notes
For a thicker blueberry layer, use the cornstarch and water mixture. Enjoy your breakfast!
