Method
- Preheat your oven to 350°F (175°C). Grease and flour your baking pan.
- In a large bowl, mix the grated carrots, brown sugar, and white sugar. Then add the eggs, vegetable oil, vanilla extract, and crushed pineapple. Mix well.
- In another bowl, combine the all-purpose flour, baking soda, salt, ground cinnamon, and walnuts. Gradually add the dry ingredients to the wet mixture and stir until combined.
- Pour the batter into the prepared baking pan and bake for 40 minutes or until a toothpick inserted in the center comes out clean.
- Let the cake cool before serving.
Notes
You can add cream cheese frosting for extra flavor.
