Ingredients
  

Flatbread
  • 1 flatbread flatbread 7.5oz
Garlic
  • 2 tablespoon minced garlic
Crockpot BBQ Chicken
  • 1.5 lb chicken breast
  • cup chicken broth
  • 12 oz bbq sauce
  • 1 teaspoon garlic powder
  • ½ teaspoon onion powder
  • 1 teaspoon sea salt
  • ½ teaspoon black pepper
  • 1 ¼ cup shredded mozzarella cheese
  • cup shredded monterey jack with jalapeno peppers
  • ¼ cup red onion sliced lengthwise
  • 1 cup pineapple finely chopped
  • 2 tablespoon cilantro
Topping
  • to taste additional bbq sauce

Equipment

Method
 

  1. Place the chicken breast, chicken broth, BBQ sauce, garlic powder, onion powder, sea salt, and black pepper into the crockpot. Cook on low for 4 hours.
  2. After cooking, shred the chicken with two forks. Mix in the chopped pineapple, red onion, cilantro, and adjust seasoning if needed.
  3. Preheat the oven to 400°F (200°C). Spread the shredded chicken mixture over the flatbread.
  4. Top with shredded mozzarella and Monterey Jack cheese. Bake for 10-15 minutes until the cheese is melted and bubbly.
  5. Drizzle with additional BBQ sauce before serving.

Notes

You can substitute the flatbread with a pizza crust if desired. Adjust the amount of BBQ sauce based on your preference.
