  • 1 wedge Lemon optional, for a hint of brightness

Method
 

  1. Toast the slices of whole-grain bread until golden brown.
  2. While the bread is toasting, bring a saucepan of water to a gentle simmer. Add vinegar if desired.
  3. Crack each egg into a small bowl and gently slide them into the simmering water. Cook for about 3-4 minutes until the whites are set.
  4. Remove the poached eggs with a slotted spoon and drain on paper towels.
  5. Slice the avocado and mash it slightly with a fork. Season with salt, pepper, and lemon juice if using.
  6. Spread the avocado mixture on the toasted bread. Top each slice with a poached egg, fresh herbs, and red pepper flakes if desired.
