Ingredients
  

For the Slaw
  • 2 cup shredded cucumber
  • 1 cup shredded carrots
  • 1 can (15 oz) chickpeas, drained and rinsed
  • ¼ cup thinly sliced red onion
  • ¼ cup chopped cilantro
For the Dressing
  • 2 tablespoons sesame oil
  • 1 tablespoon rice vinegar
  • 1 tablespoon soy sauce
  • 1 teaspoon honey
  • 1 teaspoon grated ginger
  • 1 clove garlic, minced
  • 1 tablespoon sesame seeds

Method
 

  1. In a large bowl, combine the shredded cucumber, carrots, chickpeas, red onion, and cilantro.
  2. In a separate bowl, whisk together the sesame oil, rice vinegar, soy sauce, honey, ginger, and garlic.
  3. Pour the dressing over the slaw and toss to combine. Sprinkle with sesame seeds before serving.

Notes

This slaw can be made ahead of time. Store it in the refrigerator for up to 2 days.
