Ingredients
  

Dough for double-crust pie
  • cup sugar
  • cup packed brown sugar
  • ¼ cup all-purpose flour
  • 1 teaspoon ground cinnamon
  • ¼ teaspoon ground ginger
  • ¼ teaspoon ground nutmeg
  • 6 to 7 cups thinly sliced peeled tart apples
  • 1 tablespoon lemon juice
  • 1 tablespoon butter
  • 1 large egg white
Optional Toppings
  • Turbinado or coarse sugar for topping
  • ground cinnamon for topping
  • vanilla bean ice cream for serving
  • caramel sauce for serving

Method
 

  1. Preheat your oven to 425°F (220°C).
  2. Prepare the pie dough and fit it into a pie dish.
  3. In a large bowl, mix the sugars, flour, cinnamon, ginger, and nutmeg.
  4. Add the sliced apples and lemon juice to the bowl, tossing to coat.
  5. Pour the apple mixture into the prepared pie crust.
  6. Dot the filling with butter and cover with the top crust. Seal and cut slits for steam.
  7. Brush the top crust with egg white and sprinkle with sugar and cinnamon.
  8. Bake for 50 minutes, or until the crust is golden brown and the filling is bubbly.
  9. Let cool before slicing. Serve with ice cream and caramel sauce if desired.

Notes

For best results, use a mix of tart and sweet apples.
