- In a skillet, heat olive oil over medium heat. Add shrimp, chili powder, cumin, salt, and black pepper. Cook until shrimp are pink and opaque, about 5-7 minutes.
- In a mixing bowl, combine cooked rice or quinoa, corn, diced avocado, cherry tomatoes, red onion, lime juice, mayonnaise, minced garlic, water, and lemon juice. Stir well to combine.
