Ingredients
  

For the Shrimp
  • 1 lb large shrimp, peeled and deveined
For the Seasoning
  • 1 tablespoon olive oil
  • 1 teaspoon chili powder
  • ½ teaspoon cumin
  • ¼ teaspoon salt
  • ¼ teaspoon black pepper
For the Bowl
  • 2 cups cooked white rice or quinoa
  • 1 cup corn kernels (fresh or thawed frozen)
  • 1 ripe avocado, diced
  • ½ cup cherry tomatoes, halved
  • ¼ cup red onion, finely chopped
  • 1 tablespoon lime juice
  • 2 tablespoons mayonnaise
  • 1 clove garlic, minced
  • 1 tablespoon water
  • 1 teaspoon lemon juice

Method
 

  1. In a skillet, heat olive oil over medium heat. Add shrimp, chili powder, cumin, salt, and black pepper. Cook until shrimp are pink and opaque, about 5-7 minutes.
  2. In a mixing bowl, combine cooked rice or quinoa, corn, diced avocado, cherry tomatoes, red onion, lime juice, mayonnaise, minced garlic, water, and lemon juice. Stir well to combine.
  3. Serve the seasoned shrimp over the rice mixture and enjoy your shrimp bowl.
